Chef Jeff McCourt (aka The Big Cheese) is putting time tested cooking values to practice every day at the Glasgow Glen Farm when he’s throwing his pizza pies.
Keeping it authentic to how Italians have been making pizza for centuries, Jeff uses only the best ingredients for his pizza and follows their tried and true methods.
Starting off with a beautiful blank canvas of scratch made dough, Jeff hand stretches each one to it’s perfect size and shape. He may even give it a toss or two!
Then it’s about the toppings. Beautiful, local, fresh toppings made up from the best our Island offers.
What makes Glasgow Glen Farm different in the pizza business is the generous use of their very own variety of gouda cheeses. Their distinctly flavourful cheeses are ever present on each pie and marry so well with the ingredients that are chosen to accompany them.
To top it off, there’s no conventional oven use here. It’s only a wood fire oven for these pizzas! Your pizza gets to sit in a bath of smokiness and intense heat to seal in the flavours and get to you in about 90 seconds! That’s the kind of fast food we can always go for.
Today we had the Hawaiian pizza from the oven. The peppers took on the a fire roasted quality while the pineapple tapered them to a perfect sweetness. The gooey gouda gave an amazing layer of chew and every bite was savoured!
